Baked Italian Pasta

It’s that time of year . . . warm, hearty meals that are so filling and comforting. And fashion experts have blessed us with sweaters to disguise it all!! Yay fall.

1 lb. ground sausage

1 lb. ground beef

1 onion, chopped

½ c finely chopped green pepper

1 14.5-oz. can Italian diced tomatoes

1 24-oz. can three-cheese Prego spaghetti sauce

16 oz. penne pasta

4 c grated mozzarella cheese, divided

1 c grated parmesan cheese

salt and pepper to taste

Brown sausage and ground beef in skillet. Add onion, green pepper, diced tomatoes, spaghetti sauce and ½ cup water. Simmer over low heat. Meanwhile, cook pasta according to package directions. Drain pasta. In large bowl combine meat sauce, pasta, 3 cups mozzarella cheese, parmesan cheese and salt and pepper. Pour into large buttered baking dish. Cover with foil and bake at 350°F for 30 minutes. Remove foil, sprinkle with additional 1 cup mozzarella cheese, and bake an additional 15 minutes or until cheese is melted.

5 cups of cheese? Sausage and ground beef? Yes, please. And may I have seconds?

Meat + cheese do equal quite the irresistible combination, don’t they? This recipe makes so much that you most definitely can have seconds! And warmed leftovers tomorrow. It’s the “good” kind of leftovers, sort of like lasagna. :)
