Baked Potato Bar


When I was in high school, I ran the potato piler in the pit during spud harvest. For those of you who don’t speak “spud” … that means in the fall when we harvested potatoes from the field, I ran the machine that piled the potatoes from the truck into the storage facility. After watching what my boss told me was “a million dollars worth of potatoes” drop day after day after day, I never wanted to eat another potato in my life. Ironically, my boss gave me a ginormous box of potatoes as a “bonus.” Thankfully, my appetite returned, because I love me a good Idaho spud. Here’s how we fix them at our house:


1-2 potatoes per person, baked


cheddar cheese

pepper jack cheese

chopped ham

bacon, cooked and crumbled

sweet onions, chopped

chives, chopped

sour cream

ranch dressing

salt and pepper


Break potato open and pile on whatever combination of toppings you prefer.
