
You’ve probably noticed I include more than one version of a recipe. The reason for that? Mostly for your convenience, so you don’t have to follow links to get “base” recipes. But also for category purposes. I like things to be simple. Efficient. Straightforward. Let’s hope it’s working! Here’s the chicken salad sandwich version:
3 cups cooked chopped chicken (I like to use rotisserie chicken, cut up quite fine and chilled; canned chicken works too)
3/4 cup chopped celery
1/4 cup sweet onion, chopped
1 c cashews
1/3 cup mayonnaise
salt and pepper to taste
croissants
Mix chicken, celery, onion and cashews. Stir in mayonnaise. Salt and pepper to taste. Chill. Serve on fresh croissants.
