There’s a revolution going on at my house. My husband is on a health kick and while I am totally impressed and cheer “good for you”, I secretly miss cooking the big “meat and potatoes” meals and family-sized desserts. I mean, I don’t even recognize half the foods in my fridge. He’s making things like Raspberry-Hazelnut Muesli, Lentil Soup, Smoky Lemon Tahini Dressing, Red Quinoa with Pistachios, and Salted, Seedy Chocolate Bark. Bark! It’s like a foreign language to me. I feel so displaced in my own kitchen. I haven’t even been able to function. Then I remembered the president’s speech in “Independence Day”: “We can’t be consumed by our petty differences any more . . . we’re fighting for our right to live (or cook) . . . we will not go quietly into the night! We will not vanish without a fight! We’re going to live on, we’re going to survive.” So I got back on the horse, er kitchen, and did my own version of healthy. In plain English. Citrus apple slices. They are amazing. Juicy. Fresh. Healthy. And the apples don’t brown because of all that juice….
1 orange, juiced
1 lemon, juiced
1-2 apples (Fuji or Gala)
Pour orange and lemon juice in small bowl. Slice apples thin and add to juice. Stir to coat. Chill in refrigerator for at least 30 minutes.
