Fast & Easy Barbecue Chicken Sandwiches


You know those late afternoon grocery store runs, when you are getting all-so-important ingredients for cookies, and then you realize that you don’t have any idea what you are making for dinner that night? I’ve been in that boat so many times. Cookies are good, but they probably can’t count as “dinner”. Here’s a fast, easy dinner solution that requires only three ingredients. Three. Total. It’s fast. It’s easy. It’s warm. It’s delicious. Grab some chips and applesauce and you’ve got yourself a meal!


1 rotisserie chicken

1 cup barbecue sauce



Pull meat off bones and chop fine. Add to saucepan or crock pot. Stir in barbecue sauce. Heat thoroughly. Serve on buns.

    Wait. Cookies can’t count as dinner? Are you sure? In that case, I guess I’ve gone totally without dinner almost every night for the last ten years.

    BTW, this looks FABULOUS!!! I’ll just stick a big cookie under the chicken so I can slowly adapt to the new way of life.

      …laughing… Well, like Bill Cosby says about cake, it has eggs, flour, sugar . . . just like pancakes. So cookies could/should count for dinner. As always, I love hearing from you. You make me smile every time!! :)
