Oreo Cookies

Thanks to my friend, Wendi, who gave me a batch of these cookies in college, homemade oreos are a part of my life. I think that is a sign of a true friend, one who will not only give you cookies but share the recipe. Thanks Wendi! I love these cookies so much. They are moist, creamy, delicious, and they have the perfect combination of flavors that compliment one another. You’ve got to make them. You’ll love them too.

 

Oh, and if you’re throwing, say, a superbowl party, you could shape the oreos like footballs. If you’re me, you’d attempt football-shaped cookies but they’d look more like torpedos, your husband would walk in just as you are about to bake them, he’d rescue you by pointing the tips of the torpedos so they look more like footballs, and they’d turn out brilliantly.

 

 

1 Devil’s Food cake mix

1/2 cup oil

1/4 cup flour

2 eggs

 

Mix with fork and cook as little round cookies. (May flatten slightly if desired.) Bake at 375 for 8 minutes. Cool. Match two cookies and frost with cream cheese frosting:

 

8 oz. cream cheese

1 cube butter, softened

dash salt

3 cups powdered sugar

1 t vanilla

 

Beat until smooth.

      Thanks, Amy. The trick? Cook them until they just barely start cracking on top. Any more and they’ll be dry. Call me the queen of undercooked food! Haha!
