Some mornings, simple is good. You’re barely awake. You don’t need chaos or noise or anything crazy. Other mornings, you need a party on your plate to wake you up, get you going. This is one of those “party foods.” Nothing dull about it. The peppers and onions contribute such great flavors, while the ham and cheese round out the dish perfectly. Serve with toast and juice and you’re very well-rounded, at least in the food department.
For each serving:
1 t butter or margarine
2 T cheddar cheese, grated
1 T chopped ham
1 t green pepper, finely chopped
1 T sweet onion, chopped
salt and pepper to taste
Melt butter or margarine in skillet over medium/low heat. Meanwhile, whisk eggs until well-beaten. Stir in cheese, ham, green pepper and onion. Salt and pepper to taste. Cook in skillet, stirring occasionally, until set.
