I love this recipe because technically it could be considered a dessert (as it contains pudding), but it is indeed a salad. Which is an added bonus because then you can still have dessert! See how clever? Shanna shared this one with me. (Interestingly, Shanna and I have lived in the same place at the same time . . . three times. It happened completely by chance, but am I sure glad. She’s been a tried and true friend.)
1 small box orange jello
1 small box instant vanilla pudding
1 small box tapioca pudding
1 small container cool whip
1 can mandarin oranges, pre-chilled
In a saucepan, whisk the three mixes into 3 cups cold water. Bring to a boil over medium heat, stirring constantly. Pour into bowl and press saran wrap onto top layer of jello/pudding mixture. Like this:
Chill several hours or overnight. When ready to serve, fold cool whip into jello/pudding mixture. Drain mandarin oranges and fold into salad.
