Raspberry Pinã Coladas


Those who can’t do, pretend. That’s my theory when it is the dead of winter and I wish I was basking in the sun on a pristine beach in the Caribbean. How to pretend, you ask? Just turn up the thermostat, put on your brightest Hawaiian shirt, blast some Beach Boys out your speakers, and whip yourself up one of these flavorful raspberry pinã coladas. Welcome to paradise, my friends!


1 10-oz. can Bacardi pinã colada frozen concentrate

1 12-oz. can orange-pineapple juice frozen concentrate

3 c fresh or frozen raspberries, thawed

drink umbrellas, optional


In extra large pitcher or bowl, mix pinã colada frozen concentrate, orange-pineapple frozen concentrate, and 6 cups water. Stir until concentrate is thoroughly mixed in. Refrigerate until ready to serve.


In separate bowl, mash raspberries with fork and pour through fine mesh strainer, reserving juice. Refrigerate until ready to serve.


When ready to serve, pour pinã colada juice into glass. Top with balled or crushed ice. Pour 2-3 T raspberry juice on top of ice. Top with umbrella, if desired. Mix with straw to blend flavors.

    I am such a ding dong. I was sitting here looking at this picture thinking to myself, “Now wait a minute. I am positive I commented on this recipe and picture. Did I take my ambien before or after I thought I wrote a comment?” Then, I breathed I sigh of relief when I remembered that I had written a comment on Tasty Kitchen, not here. Whew! Not completely crazy yet. Yeah me! But, just for the record, THIS LOOKS SO AMAZINGLY WONDERFUL!!!!!
