Ridiculously Delicious Waffles


Whenever I serve waffles, I like to quote Donkey in Shrek . . . “I’m makin’ waffles!!” It’s just a fun food. Reminds me of being a kid. On Saturday mornings my dad was the designated waffle maker in the house, and he’d sometimes get creative and add things like Jell-O, root beer, or chocolate chips to the batter. It was always so much fun to see what would be in our waffles. And we always had to fill each individual waffle square with jam or syrup . . . mmmmmm. Here’s our favorite recipe for ridiculously delicious waffles:


2 eggs, separated

1 3/4 c milk

1/2 c vegetable oil

1 3/4 c flour

1 T baking powder

1/4 t salt


Whisk egg yolks, milk and oil. Add flour, baking powder and salt. Stir just until combined. Batter will be lumpy. In separate bowl, beat egg whites until stiff peaks form. Fold egg whites into batter, being careful not to overmix. Pour batter onto preheated waffle iron. Cook until golden.
