Yes, folks, two sweet recipes in a row. You’re welcome. (Or I’m sorry. LOL!) I really needed to make up for all the food preservation recipes. I mean, those are great. Necessary. Helpful. But, let’s be honest, it’s recipes like soft caramel popcorn that make us light up. Sing. Party. Right? This soft caramel popcorn is so ooey gooey good! It doesn’t take very long to cook and therefore, the caramel stays soft. Don’t get me wrong. I’m all for crunchy caramel popcorn balls. There’s no discrimination here. It’s just that sometimes we’re in the mood for gooey. Ooey gooey. Yes? Yes.
1/3 c unpopped popcorn
1 cup butter or margarine
1 1/3 c brown sugar
1/2 c Karo light corn syrup
Pop popcorn using air or oil popper. Remove unpopped kernels. Place in large bowl and set aside.
In saucepan over medium heat melt butter or margarine. Add brown sugar, corn syrup and salt. Cook, stirring constantly, until mixture comes to a boil. Boil 2 minutes while continuing to stir. Pour over popcorn. Mixture will thicken slightly as it cools. Cool 5 minutes and stir again to coat popcorn evenly.
