Taco Soup


It’s still snowing here, so I’m still serving soup. That just makes sense, doesn’t it? Soup is just so comforting on cold days. Plus, this soup comes with so many choices of garnishes . . . I love choices. Like: do I wear the brown shoes with this outfit? Or the black ones? Do I want chocolate ice cream? Or vanilla? (Notice it’s not “do I want any ice cream at all?” . . . it is “which flavor of ice cream do I want?”)


1 lb. ground beef, browned

1 sweet onion, chopped

1 can corn niblets

1 can kidney beans

1 can diced tomatoes

1 can tomato sauce

2 cups salsa

1 McCormick taco seasoning packet

1/2 t chili powder

garnishes: tortilla strips or Fritos, sour cream, cheddar cheese, chopped tomatoes, olives, avocado, and/or chopped onions


Combine beef, onion, corn, beans, tomatoes, sauce, salsa, taco seasoning, and chili powder in large pot. Simmer over medium/low heat for at least 30 minutes. Serve with your choice of garnishes.


To fry tortilla strips: cut 3-4 tortillas into 3/8-inch strips. Fry in hot oil over medium/low heat for a few minutes until golden. Drain on paper towels.
