Toasted Sugared Pecans

Here’s an easy way to dress up your salads or desserts and simultaneously add a fantastic flavor. That’s like getting two for the price of one! Reminds me of high school when my sister and I both ran for student body office. Our last name was “Price” so we milked that for all it was worth. Our slogans? “Vote Twice for Price” or “Double Your Pleasure, Double Your Fun, Vote for Two Prices Instead of One” . . . attached to Doublemint Gum, of course. Ahh, high school. Fun times! She won, I lost, but still, fun times!! LOL! (Clearly someone didn’t follow our instructions and vote twice for Price. Haha!)

My favorite way to eat these? Strawberry Spinach Salad.

1 T butter

1 c chopped pecans

1 T + 1/4 c brown sugar

1/4 c granulated sugar

1/2 t salt

Melt butter in saucepan over medium/low heat. Stir in 1 tablespoon brown sugar. Add pecans and stir until evenly coated. Cook for 5 minutes, stirring occasionally. Meanwhile, mix 1/4 c brown sugar, granulated sugar and salt in paper bag. Add pecans and shake. Pour into bowl. Serve plain, on salads, or over ice cream or other desserts.
