Cake Batter Caramel Popcorn

Do you sometimes want to have a party waiting for the kids when they come home from school? A celebration of them. A message that they matter. That they are important enough for a party for no particular reason. This recipe is perfect for such an occasion because 1) it looks like a party, 2) it tastes like a party, and 3) it is unique enough to feel like a special occasion. It isn’t just popcorn. It’s party popcorn!!

 

1 3-oz. bag microwave butter popcorn

1/2 cup butter

1/2 c dry white or vanilla cake mix

1/2 c granulated sugar

1/4 c light corn syrup

1/2 t salt

1/2 t vanilla

sprinkles

 

Pop microwave popcorn according to package directions. Remove all unpopped kernels. Grease baking sheet (with 1-inch sides). Spread popcorn on baking sheet. Set aside.

 

Melt butter in saucepan over medium heat. Stir in cake mix, sugar, corn syrup, and salt. Bring to a boil. Boil for 5 minutes, stirring constantly. Stir in vanilla. Pour over popcorn and stir until popcorn is coated. Bake at 250°F for 1 hour, stirring every 15 minutes. Remove from oven and immediately top with sprinkles. Cool. Store in airtight container.

    Did you make this recipe up? It sounds so yummy. Does it taste like cake batter? I have never heard of something like this. I will have to try it sometime.

      Hi Jo . . . found it on a food blog (source link is at the bottom of the recipe if you want to follow it). It totally tastes like cake batter. A really fun recipe! It ends up with a slight crunch and isn’t sticky. Bonus!!
