Batter-fried French Toast

Sometimes you have to go big or go home. Don’t settle for plain French toast. Instead of dipping your bread in just eggs, dip it in batter . . . and then fry it! Turns a nice golden brown and has such a rich flavor. Oh baby!

2 eggs
1 c milk
¾ c flour
2 t sugar
1 t baking powder
½ t salt
10 slices bread (recommend Texas toast, sliced on the diagonal to form triangles)
butter for grill

In shallow dish beat eggs. Whisk in milk. Add flour, sugar, baking powder and salt. Whisk until smooth. Dip each slice of bread in batter (both sides) and cook over medium heat on generously buttered grill 3-4 minutes each side.
