Birthday Cake Popcorn

“Sprinkle with sprinkles.” I think that may just be my favorite sentence ever. Sprinkles are like sunshine to me. They are happy, colorful, bright. They are definitely recommended if you are down and out, having a bad day, or struggling to keep your chin up. They should be mandatory for patients, inmates, and college students during finals week. Sprinkles are the solution. I say more sprinkles . . . for everyone!!
1½ c white chocolate chips
¼ c shortening
1½ c white or yellow cake mix, dry
6 cups popcorn (1/3 c kernels = 6 cups popped)
¼ c sprinkles
Melt chocolate chips and shortening in double boiler. Stir until melted and smooth. Add dry cake mix and stir again until combined. Pour over popped corn and stir until popcorn is evenly coated. Spread popcorn onto cookie sheet. Sprinkle with sprinkles. Let set for 30 minutes.
