Chocolate Marshmallow Cookies

So, you know when you’re having one of those days? Recently I had a string of those…root canals (yes, plural!!), DMV, sinusitis. And you think it will never get better. And then you have a chocolate marshmallow cookie. And everything is right with the world again. I should just rename these cookies “hope”.
Cookies:
1 Devil’s food cake mix
1/4 cup flour
1/2 cup oil
2 eggs
27 large marshmallows, cut in half
Frosting:
1 12.5-oz. bag milk chocolate chips
½ c whipping cream
3 T butter
1 t vanilla
1 c powdered sugar
In large bowl mix cake mix (dry), flour, oil, and eggs with fork until incorporated. Form balls using ¾-inch cookie scoop and place on cookie sheet. Bake at 375°F for 5-6 minutes. Remove cookies from oven. Place marshmallow half, cut side down, onto each cookie. Return to the oven for 2 minutes. Cool 2 minutes. Remove to wire rack to cool completely.
Meanwhile, make frosting by heating chocolate chips and whipping cream in double boiler, stirring occasionally, until melted and smooth. Remove from heat. Add butter and stir until melted. Add vanilla and sugar; beat until smooth. Frost cooled cookies. Store in airtight container. Makes 54 cookies.
