Cornmeal Mix

Sometimes corn muffin or cornbread recipes call for cornmeal mix which is a mix of cornmeal along with flour, leavening and salt. It can be found in the grocery store, or you can make it yourself. You’ll feel like a kitchen rock star if you do. Play your air guitar and stick your tongue way out because, honey, you rock!!
4 c flour
4 c cornmeal
2 c powdered milk
2/3 c sugar
4 T baking powder
1 T baking soda
1 T salt
Add ingredients to large bowl and stir until ingredients are incorporated. Store in an airtight container or resealable bag. Makes 10 cups*.
*If you want only 2 cups mix for, say, Bacon and Cheddar Hush Puppies, use:
3/4 c flour
3/4 c cornmeal
1/3 c powdered milk
2½ T sugar
2½ t baking powder
½ t baking soda
½ t salt
