Creamy Italian Pasta Salad

If you love cold pizza, you’ll dig this salad. The flavors blend and complement each other so well. Did I really just use the word “dig”? Heavens. Am I straight out of the ‘70s or what? Flower power. Disco. Peace, man! Ok, confession. I AM straight out of the ‘70s. I even wore bell bottoms that, yes, covered my size 10 shoes. I’m digging myself deeper, aren’t I? Now you know my shoe size. I might as well just tell you my weight too!! Ok, no. We’ll stop there….
1½ c uncooked penne pasta (approximately ½ lb.)
¼ c finely chopped green pepper
1 c chopped or mini pepperoni
½ c sliced olives
¾ c shredded mozzarella cheese
¼ c chopped red onion
1 c mayonnaise
1 t dry Italian dressing mix (taken from packet of Italian dressing mix)
salt and pepper
Cook pasta according to package directions for tender noodles (usually 12-13 minutes). Rinse in cold water. Stir in pepper, pepperoni, olives, cheese, and onion. In separate bowl, combine mayonnaise and dry Italian dressing mix. Stir into salad. Salt and pepper to taste. Refrigerate until well-chilled. Serve cold. Serves 4-6.
