Lemon Chicken

You had me at “cube of butter”. Seriously, I read “place one cube of butter in crock pot” and I knew we were meant for each other. This chicken is flavorful. It is moist. It is tender. AND it is low-carb?! Yuh-huh! Never mind that cube of butter. It is low carb!! Always looking for the good . . . .
½ c butter
1 lb. chicken tenders
1 pkg. Italian dressing (dry)
1 lemon, juiced
Place butter in crock pot. Layer chicken, dressing (dry), and lemon juice on top. Cover and cook on low 7-8 hours. Shred chicken and spoon extra juices over top. Serve alone, over rice or potatoes, or on buttered toasted bread.
