Strawberry Soup

Typically, cold soup doesn’t sound very appetizing. Probably because it means the temperature of our hot soup has dropped to the unappealing stage of “lukewarm”. Eww. But . . . what if our soup is supposed to be cold? Hmm. Interesting. Even though I was introduced to cold Scandinavian Fruit Soup years ago, I’ve struggled with calling cold soup “soup”. I’ve just been programmed to expect something warm. So, if it makes you more comfortable calling this strawberry soup a “smoothie”, be my guest. I understand. This summer soup, er smoothie, is so refreshing. The fresh strawberries really contribute to a fabulous fruity flavor.
1 lb. strawberries (approximately 3 cups)
1 c vanilla yogurt
¼ c sugar
¼ c orange juice
chopped strawberries for garnish
Combine strawberries, yogurt, sugar and orange juice in blender. Blend until smooth. Chill. Serve with chopped strawberries, if desired. Makes 4 cups.
