Stuffed Strawberries

A perfect appetizer for spring. I picture a party in the backyard with white café bistro table and chairs. Maybe an umbrella. And a cool breeze. Reality? I’m in my sweats in the kitchen. Ha! Either way, they’re delicious!!
30 strawberries, washed and hulled
½ c whipping cream
4 oz. cream cheese, softened
1 c powdered sugar
½ t vanilla
Cut bottoms off strawberries so they sit flat. Set aside. In small bowl, beat whipping cream until stiff peaks form. Set aside. In medium bowl, beat cream cheese until smooth. Slowly beat in powdered sugar. Add vanilla and beat until smooth. Fold in whipping cream. Spoon filling into pastry bag with star tip and pipe into strawberries. Serve immediately or refrigerate until ready to serve.
