Whipped Cream Cheese Frosting

Here’s a twist to cream cheese frosting: fold in whipping cream. Another idea from Mel who never ceases to amaze me. Seriously, you need to check out her site. The food is so unbelievably good. All of it!! As she pointed out, this frosting is great in that it stays soft.
1 8-oz. pkg. cream cheese, softened
1½ c powdered sugar
1/8 t salt
1 t vanilla
1½ c heavy whipping cream
food coloring, optional
Beat cream cheese, powdered sugar, salt and vanilla until light and fluffy. In separate bowl, whip cream until stiff peaks form. Gently fold whipped cream into cream cheese mixture until thoroughly incorporated. Color if desired.
