Chicken Salad


This recipe is a lot like egg salad. It can be a sandwich or a salad, depending on how you serve it. AND . . . there’s a variety of ingredients you can use to change the flavor of this salad, depending on what you’re in the mood for. For the salad, I like to use almonds and grapes. For the sandwich: cashews. Here’s the “salad” version:


3 cups cooked chopped chicken (I like to use rotisserie chicken, cut up quite fine and chilled; canned chicken works too)

3/4 cup chopped celery

1/4 cup sweet onion, chopped

1/2 c diced almonds

1 cup seedless green grapes, halved

1/3 cup mayonnaise

salt and pepper to taste

bed of lettuce


Mix chicken, celery, onion, almonds, and grapes. Stir in mayonnaise. Salt and pepper to taste. Chill. Serve on a bed of lettuce.
