Peach Crisp

There is a small window when peaches are ripe. I don’t know about you but I take full advantage of that window. I eat peaches plain, on ice cream, on cold cereal or waffles. I freeze peaches, stock the freezer with frozen peach salad, can peaches and make peach jam. And, of course, make peach crisp. A food so indicative of fall. Serve it with vanilla ice cream or sweetened whipping cream for an added punch of creamy flavor.

 

Bottom layer:

6 medium peaches

4 T sugar

1 T butter

 

Topping:

2/3 c flour

1/2 c packed brown sugar

1/2 cup butter

2/3 c oats

 

vanilla ice cream or sweetened whipping cream, optional

 

Butter 10 x 10ish baking dish. Peel, pit, and slice peaches. Place in dish. Sprinkle with sugar. Dot with butter. In separate bowl make topping by combining flour and brown sugar. Cut in butter until mixture resembles coarse crumbs. Stir in oats. Sprinkle on peaches. Bake at 350°F for 30-35 minutes or until topping is golden. Serve with vanilla ice cream or sweetened whipping cream.
