Soft Tacos…


. . . or as I like to call it, Taco Tuesday! Yes, that’s right, Tuesday at our house means tacos or some kind of Mexican food. One of these days I want to turn it into a full-blown fiesta, complete with sombreros and chili pepper lights! And as you can see, my relationship with McCormick continues. The taco seasoning mix along with the tomato sauce give the meat great moisture and flavor. Because I’m such a lettuce fanatic, you can’t tell that from the photo. I guess you’ll just have to trust me. (smile) Here’s my favorite soft taco recipe:


1 pkg. flour tortillas

1 lb. ground beef

1 – 8 oz. can tomato sauce

1 packet McCormick mild Taco seasoning

1 cup cheddar jack cheese, grated fine

½ head iceberg lettuce, chopped

1 tomato, chopped

1 sweet onion, chopped

1 can olives, chopped

sour cream or ranch dressing


Cook beef on medium low heat until browned. Add tomato sauce, taco seasoning, and 1/3 cup water. Simmer on low 10 minutes. Meanwhile chop vegetables. Warm tortillas (I warm the tortillas in the microwave between slightly damp paper towels for 10 seconds/each tortilla or wrap tortillas in tin foil and place in 350 oven for 10 minutes). We line it all up on the counter and fix it the way we like it. Ole!
